However, I had to reconsider the word “comfort” a bit. Maybe because I was raised in an age when it was creamy, buttery porridge was the very definition of pleasant. Pies are one of the few old-fashioned pleasant dishes I can bridge, the only dish except lasagna, in which they find a flour-concentrated sauce acceptable. Otherwise, pasta and dishes made from baked rice and even superficial bowls bring them pleasure polenta. You wouldn’t think their mother was Irish; they could conclude, just from what they eat, that they were raised by an Italian who spent a long stay in the Middle East.

They like resolute flavors, chili heat and cayenne, salty feta cheese, earthy, sweaty hint of cumin and legumes – lentils and chickpeas – that Mediterranean cuisine has become popular. I also fell in love with polenta. It provides a medium-heavy quilt on which other, stronger flavors can play. Roasted rice dishes have been on the way ever since I found out that 200g of rice and 650ml of soup are cooked to perfection in 40 minutes in a 30cm pan.

My idea about pleasant food is spreading and the dishes I share here prove it. But I don’t give up creamy gratins.
