BUrns night, an extravagant affair that took place in late January to commemorate the life of Scottish national poet Robert Burns, traditionally involves the burger sound of bagpipes, creamy neep and tatties, and the beating of a fiery whiskey sauce.
The undisputed highlight of the evening is the performance of Burns’ song To a Haggis. During the song, the sweetness of the pudding splits theatrically (‘his knife sees a rustic work work’), taking care to expose a good amount of its insides. But make sure you make a notch in front of the title – your neighbors may not thank you when you go inside to cut your haggis and it jumps under pressure and bury them in pieces of roasted meat.
