Produces
5 pancakes
Ingridients
- 100 g of plain flour
- 1 egg, plus extra yolk for a super silky texture
- 200 ml of milk
- 50 g of melted butter, plus extra to grease the baking tray
Method
- Put all the ingredients and a pinch of salt in a blender. Mix into a smooth dough. Let rest for at least an hour.
- For cooking, heat a shallow pan or skillet to really heat up. Coat with melted butter. Pour a small ladle (approximately 60 ml) of dough into the pan and turn it over until it covers the pan. Bake until the edges start to brown and move away from the edges of the pan. Turn and bake on the other side for a minute.
- If you care about the crowd, it may make sense to keep going, at least for the main course. You can prepare the pancakes earlier in the day and stack them. Laying sheets of greaseproof paper between each is an approved method, but if you make sure they are well-baked, a little crunchy at the edges, you should be fine. Keep them on the side, covered with a kitchen towel, not in the refrigerator.
- Heat each one in a pan for a few seconds or fill the pancakes and reheat in the oven.
10 great topping ideas for Pancake Day 2022
Parmesan and spinach
Sprinkle grated parmesan into the pan before pouring the pancake batter. Cook as usual (if the pancakes stick to the fish slice to turn) and fill with the spinach, dried in butter and seasoned with salt and lots of black pepper.
Lasagna for pancakes
Place the pancake on a greased baking sheet and spread with about six tablespoons of bolognese sauce and four tablespoons of white sauce. Drizzle with another pancake, Bolognese sauce and white sauce. Repeat and finish with a fourth pancake topped with white sauce and generously grated Parmesan cheese. Refrigerate until ready to eat. Bake for 30 minutes at 180 ° C / gas 4 until heated and browned. Cut into rings for serving. Enough for four people.
Cabbage and chili
In the London restaurant Luca, they wrap soft socca (chickpea pancake) around stewed cabbage mixed with chili. It is also good with ordinary pancakes: blanch 200 g of kale (remove the hard stalks) and finely chop with a small clove of garlic and a good pinch of salt. Mix with enough olive oil to get a pesto consistency, spread on hot pancakes and roll. Enough for two to three pancakes.
Leeks, haddock and chives
Fry sliced leeks in 50 g of butter with half a teaspoon of turmeric and fennel seeds. Stir in 300 g of cooked smoked haddock, four tablespoons of crème fraîche and chopped chives. Heat and season with pepper. Fill four pancakes and serve with steamed purple broccoli.
Bruce crepes
Mix 500 ml of the prepared cream with a spoonful of corn flour and mix until it thickens. Fill six pancakes with four tablespoons of cream and a few halves of apricots. Fold the sides, then the top and bottom to make a piece, and turn on the baking sheet. Sprinkle with sugar and grill until caramelized.
Chocolate and marshmallow
Put four squares of chocolate on the pancake in a hot pan. Sprinkle chopped hazelnuts and a handful of mini marshmallows on top. Fold in the package and serve immediately.
Rhubarb and blood orange
Cut 400 g of rhubarb into short lengths and arrange them in one tight layer in a baking dish. Add a pod of vanilla, sprinkle with 200 g of sugar, cover with foil and bake for about 20 minutes at 180C / gas 4. Allow to cool, still covered. Using a sharp knife, cut off the peel and outer membrane of the four blood oranges, then cut them into thin slices. Before preparing the pancakes, add the grated orange peel to the pancake batter. Serve the pancakes with blood orange and rhubarb compote. Enough for six.
Seville orange and sugar
Simple but good: use halved Seville oranges instead of lemons to squeeze hot pancakes. Don’t forget the bowl of sugar on the table.
Passion fruit and chopped mango
Fill the pancakes with passion fruit and chopped mango, a good spoonful of Greek yogurt and a pinch of honey. Add half the lime to squeeze.
Caramelized pecans and maple syrup
Fry 50 g of pecans in a hot pan, then add three tablespoons of maple syrup and stir until caramelized. Pancakes are served with vanilla ice cream, caramelized pecans and even more syrup. Do you want fruit? Add some stewed apples.
