Easter is a great time of year to go wild with colors. I like to bring my personality into my baking and themes Easter – chickens, rabbits, spring flowers – allow so much creativity. Everyone could use the baking project to relax right now, and it is fantastic thing to do with kids over the spring break.
Absolutely everything on a hot bun appeals to me: cinnamon, currants and citrus are some of my favorite things. In my recipe below, I love how the dough rises, that it looks like the bunnies are lightly dipped in bread and like they are peeping out of their pit.
I came up with carrot cookies after seeing people make little animal cookies for Chinese New Year. The dough is easy to shape and the color will stay vibrant after baking. They are also gluten-free, which means they are also deliciously soft and crumbly.
The Funfetti cake, below, is a real show. You need to give yourself enough time – bake cakes one day and decorate the next, otherwise you will be able to run out when it comes to washing up. For this I would recommend a turntable, plus an offset pallet knife and scraper to keep the glaze nice and tidy.
The most important thing is to have fun doing it. Make your own and go off the track – that’s it the joy of baking. A lot of people think it’s scientific and accurate, but I find it a lot of fun when something doesn’t go according to plan. Accept cracks and awkward pieces and incorporate them into your design. Easter is: no need to stress.
Hot cross bunnies
This way, your house will smell wonderful, and you will be able to have fun and create any shapes of bunnies from unleavened dough. Bunnies are more for decoration, but add a lot of fun and charm to this classic Easter cake.
