In order to lose weight, Kat switched ingredients to reduce her carb intake, making it seem like she wasn’t dieting at all.

“For example, I replace the rice in the curry with cauliflower rice and have Slendier edamame pasta instead of real pasta,” she said.

‘I eat to nourish my body instead of punishing it; I’ve also discovered that most of my favorite family meals can be adapted to be more in line with a lower carb meal, which is great,” she said.

‘I ate more than I had before, none of the meal prep felt overwhelming and at no point did I actually ‘feel’ like I was on a restrictive diet.’

She cooked meals in bulk and froze portion sizes for ‘nights when you don’t have time to cook’.

‘I have a much kinder inner voice and my self-esteem continues to improve!’ she said and has ambitions to be a great role model for her children.
