- 2 tablespoons (tablespoons) of olive oil
- 1 cup sliced onion
- 2 cups of sliced carrots
- 1 cup diced cilantro
- 5 cups of vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped green beans
- 1 cup chopped kale
- 1 teaspoon of salt
- 1/2 teaspoon pepper
- 1 cup parsley
- 2 cups cooked brown lentils
- 2 cups of cooked rice
Add a tablespoon of olive oil and fry the onion, celery and carrots in a large soup pot. Cook them for 5 minutes or until lightly cooked.
When the vegetables are fried, add the green beans, vegetable broth, tomatoes, pepper, salt and parsley. Mix them well, cover with a lid and cook on low heat for 20 minutes.
Add cabbage into the broth and let stand for 2 minutes. At this point you can blend all the vegetables if you want your soup to be smooth.
After that, you need to add cooked lentils and cooked rice. Stir once. Bring to a boil, then remove from heat.
