How to make mushroom soup without cream
1 package of chopped mushrooms
1 large onion finely chopped
1 tablespoon butter (you can also use olive oil if you prefer)
12 chopped cloves of garlic
1-1.5 cups of milk
1/2 tablespoon cornmeal
Salt to taste
Add pepper to taste
1 teaspoon of oregano
The process of making mushroom soup
1. Take a heavy bottom pan and add butter or olive oil depending on your preference when hot.
2. Add the chopped garlic and fry for 2 minutes before adding the chopped onion.
3. When the onion is lightly fried, add the sliced mushrooms.
4. Add salt, pepper and oregano to the mushroom mixture and let it cook for 5-7 minutes, covering it with a lid. It might leave some water, but that’s nothing to worry about.
6. Blend this into a mixture with a thick consistency.
7. Take half a tablespoon of corn flour and mix it with half a cup of milk. Make sure there are no lumps.
8. Now, on low heat, add the milk and cornmeal mixture to the mushroom mixture. Move the ladle constantly to ensure there are no lumps. Also, keep the heat low because you don’t want the milk to curdle!
9. Depending on the thickness of the soup you want, add some more milk to the mixture. 10. Pour the soup into a bowl, season it with a little pepper, garnish with mushroom slices and, if desired, coriander. Serve hot with toasted garlic bread!
