Easter Bunny Carrot Cake Recipe

Carrot cake is my favorite and I like it as moist as possible. This version has it all – grated carrot, crushed pineapple, banana and coconut – all adding to the texture. If your sponges end up domed, you can cut off the tops to flatten them and crush the cut cake to use as a soil instead of making a crumb mixture.

For the cake

  • 350 g unsalted butter, softened, plus spreader
  • 150 g of powdered sugar
  • 200 g soft light brown sugar
  • 3 large eggs
  • 225 g plain flour
  • ½ teaspoon of baking soda
  • ½ teaspoon of baking powder
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of ground ginger
  • 200 g of peeled and grated carrots (about 2 carrots)
  • 75 g drained canned pineapple in juice, chopped and crushed
  • 1 small ripe banana, mashed
  • 75 g of desiccated coconut
  • grated peel of 1 orange
  • 50 g of chopped walnuts
  • 100 g of sultanas or mixed dried fruit

For the crumb mixture

  • 25 g plain flour
  • 10 g cocoa powder
  • 35 g of soft light brown sugar
  • 25 g unsalted butter, cold, cut into cubes
  • 25 g of desiccated coconut

For the orange flavored glaze

  • 50 g unsalted butter, softened
  • 300 g of powdered sugar, sifted
  • grated peel of 1 orange
  • 100 g of full-fat cream cheese or as needed

Decorate

  • colored fondant icing to make bunnies and carrots or white fondant mixed with colored gel

The method

1. Preheat the oven to 160 C/140 C fan/gas. 3. Grease and line two 22 cm loose-bottom cake pans.

2. Beat the butter and both sugars in a large bowl until pale and fluffy, then add the eggs one at a time and beat with an electric mixer until smooth (add a little flour if the mixture starts to curdle). ).

3. Next, add the flour, baking soda, baking powder, cinnamon and ginger to the bowl and mix until combined, then stir in the carrot, pineapple, banana, coconut and orange zest. At the end, stir in chopped walnuts and dried fruit.

4. Distribute the mixture among the molds and level the tops with a spatula. Bake for one hour to an hour and 15 minutes, until a skewer inserted into the center of each cake comes out clean (cover with foil if the tops start to brown too much). Remove from the oven and allow to cool in the tins before turning them out.

5. Preheat the oven to 180C/160C fan/gas mark 4 for the crumble.

6. Mix the flour, cocoa powder and sugar in a large bowl. Add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs. Mix in the coconut, pressing the mixture together to make uneven clumps of crumbs.

7. Place on a baking sheet and bake for five minutes, then remove from the oven and mix with a spoon. Return to the oven for a further five minutes, then stir again and bake for a final five minutes. Mix again until it’s crumbled like earth, then let it cool.

8. For the frosting, put the butter in a bowl and beat for 4-5 minutes until smooth. Gradually add powdered sugar, beating while adding. Add the orange zest and beat in the cream cheese a little at a time until the mixture is smooth and light and not too runny – you may not need all the cream cheese. Do not mix.

9. To assemble, spread one-third of the frosting over the top of one of the sponges and place the other sponge on top.

10. Spread the remaining glaze over the top of the top cake, leaving the sides uncovered.

11. Use the back of a teaspoon to make some small indentations in the frosting and sprinkle some of the crumb mixture in small piles to make it look like the ‘earth’ has been dug out.

12. Using fondant icing, make several orange carrots with green leaves and small bunny ears, paws and tails. Place the bunnies in the middle of the piles and scatter carrots around to make it look like they are digging them.
